Recipe of the Month
This is a delicious, and nutritious side dish. It is a quick cooking dish and is done in under 10 minutes. One serving of spinach contains the RDA of 160% vitamin A, 40% Vitamin C, 15% Iron and 8% Calcium. Try this recipe anytime you need to get those 5 servings per day of vegetables.
ITALIAN BRAISED SPINACH
Ingredients: 1 pound spinach, (about 5 cups)
Preparation: Wash spinach thoroughly
by soaking it in lots of cold water (or buy the triple washed bags in
the produce section of the supermarket). Drain. Chop spinach into about
3-inch pieces.
