Recipe of the Month

This is a delicious, and nutritious side dish. It is a quick cooking dish and is done in under 10 minutes. One serving of spinach contains the RDA of 160% vitamin A, 40% Vitamin C, 15% Iron and 8% Calcium. Try this recipe anytime you need to get those 5 servings per day of vegetables.


ITALIAN BRAISED SPINACH
WITH GARLIC AND PINE NUTS

 

Ingredients:

1 pound spinach, (about 5 cups)
1 Tbsp extra virgin olive oil
3 cloves garlic, minced
salt and pepper to taste
1 Tbsp pine nuts
Lemon wedges

 

Preparation:

Wash spinach thoroughly by soaking it in lots of cold water (or buy the triple washed bags in the produce section of the supermarket). Drain. Chop spinach into about 3-inch pieces.

Heat oil in a large skillet. Sauté garlic and pine nuts for 2-3 minutes. Add greens to skillet. (They do not have to be dried off, as the water will evaporate during cooking.) Cook over medium heat for 2-3 minutes, stirring often to coat all the spinach with garlic and oil. Sprinkle with salt and pepper to taste.
Serve with lemon wedges.
